Tony is a real restaurant guy-he has mellowed a bit over the years but he is as clever as actually. My copy of Kitchen Confidential is dog-eared and worn and I anticipate this one will probably be as well. It’ll travel via both restaurants I function at. Cannot wait for that CD-it’s even better hearing Tony tell me himself.
